“You’ve got to cook with your heart, people appreciate that. Worry less about perfection.” Classes with Jamie are always fun – she’s loved for her feistiness, wit and warmth. Born and raised on the island and trained in a French kitchen, her knowledge for food transcends borders. Here at the cooking school, Jamie focuses on the rich, multi-faceted delights of Malaysian cuisine – from authentic Malay to Penang’s famous street favourites. When she’s not in the kitchen, she either spends time reading fantasy novels or doting over her cats at home.
Experimenting in the kitchen since she was seven, Penang-born Faten Rafie comes from a family of great cooks & experienced food caterers. In addition to mastering local dishes, she’s passionate about Mediterranean and Middle Eastern cuisine, mad about Japanese food and loves the culinary offerings the rest of the world has to offer. She is a purveyor of artisanal spices and personally hand blends all the spice mixes at her “spice lab” which boasts being natural and free of artificial colors, flavors, preservatives and monosodium glutamate (MSG).
“I want to share my knowledge but I also want the guests to be able to cook these dishes at home.” Specializing in Modern Malay cuisine, Rohana puts a lot of thought into ingredients, techniques and preparation to ensure quick and easy meals.The former Singapore Airline stewardess who learnt to cook at the age of 12, began to teach after moving to Melbourne with her Aussie husband. There she enjoyed hosting weekly potluck dinners with guests whipping up a myriad of Malay Fusion dishes under her guidance. She has been teaching cooking for more than 30 years.
